I'd skip Costa. We cruised them once. It was an older ship. Celebrity is supposed to be nice. We've gone on Royal Caribbean and Norwegian Cruise Lines. I like RC the best, on a smaller ship. I don't like the new monster ones.
References :
I just booked a NCL cruise about a month out, so I'm a tad less last-minute, but close enough, so I'll help you out with some tips from my search

If you're asking about cruise lines:
-Avoid Disney: they'll be extremely expensive.
-NCL is along the lines of Royal Carribean in terms of service/price/trips/niceness. Celebrity is a bit more pricey/nice.
-try asking around with local travel agents. Either use Google/yellow-page or ask friends for referrals. Sometimes they have great last minute deals
-go onto travelocity/expedia/orbitz. They too have some awesome last minute deals on cruises
-be flexible. Sure, you might've wanted the middle, oceanview room on the top deck. But most likely it's gone by now, so maybe spring for a balcony (at this close, they might be cheap!), or think about going for an interior, or lower level oceanview. Remember, the cruise isn't meant to be spent in a room.
-try looking on the cruise-lines website. I actually got a great deal by booking through the actual cruise line, and they were right on price with expedia/orbitz/etc.
-be flexible!!

Airfare:
-again, expedia/orbitz/travelocity.
-look at cheap airlines: jet blue, spirit, southwest, airtran
-you most likely would be going out of Miami Port (for carribean). Look into flying into FLL Airport. You can take a shuttle/train to Miami airport and catch a transfer to the docks from there.
-look into taking Greyhound or Amtrak instead of flying. It may be longer, but may be way cheaper.

Good luck!
